Blue Crab Tostadas
Seafood Mix
1 - 7 oz Filet of White Fish (Black Drum preferred)
1/4 cup Onion
1/2 cup Red Bell Pepper, Diced fine
1/2 cup Poblano Pepper, Diced fine
1/4 cup Celery Stalk
6 Shrimp, Diced fine
2 Tblsp Cream Cheese
2 oz Crab Meat
Garlic to taste
Southwest Cole Slaw
1/4 cup Mayonnaise
2 Tblsp Basic Vinagerette Dressing
1/2 cup Lime Juice
Cayenne to Taste
Garnishes
Diced Avocado
Shredded Cheese
Diced Tomato
Sour Cream
Prep Instructions
Cook fish pieces for 45 minutes in steamer. Saute red bell peppers, poblano peppers, celery, garlic, and shrimp. Mix cream cheese with sauteed vegetables/shrimp when hot. Be sure it melts. Add crab meat and cole slaw dressing (just to lightly coat ingredients) and season with salt and pepper to taste. Scoop into tostada and sprinkle with shredded cheese. Garnish with avocado, shredded cheese, tomato and sour cream.
